Cherry tomato fritters - Greek Recipe


ingredients
  • 250gr cherry tomatoes, chopped
  • 1/2 onion, finely chopped
  • 15 fresh basil leaves, chopped
  • 10 fresh mint leaves, chopped
  • 3 Tbsp olive oil
  • 1 cup all purpose flour
  • salt
  • pepper
  • olive oil for frying

instructions
In a large bowl, mix together the cherry tomatoes, onion, basil, mint, olive oil, salt, pepper and 1/2 cup flour.
Add the rest of the  flour while mixing until  it becomes a thick batter.
Heat about 2-3cm olive oil in a large skillet over medium heat.
Drop a few tablespoons of the batter at a time and fry the cherry tomato fritters on both sides until golden.

Serve hot with feta cheese and yogurt dip. In a small bowl mix equal amount of crumbled feta cheese and greek yogurt. Add some chopped basil leaves and enjoy!!!
